The site is not a recipe collection or a restaurant ranking. Practical details appear only when they help explain the food itself.

Our current coverage focuses on Xi’an, Chengdu, and Chongqing. Individual dish pages connect to regional hub pages so readers can move between a specific food and the wider grain traditions, techniques, communities, and urban histories that shaped it.
How We Research and Edit
Our historical starting point is Chinese-language material, including regional food histories, culinary writing, dictionaries, and institutional records where available. Current authoritative sources are used for facts that can change. These materials guide the research, but the published articles are written as original English-language explanations rather than copied or translated passage by passage.
Not every origin story can be proven. We distinguish documented evidence from local tradition, restaurant lineage claims, and later promotional stories. When the evidence supports only a related technique or broad food category, we do not present it as proof of a dish’s direct ancestry.
Every draft receives human editorial review before publication. Precise dates, named people, etymologies, and claims involving words such as “first,” “oldest,” or “original” receive additional scrutiny. Pages are revised when better evidence becomes available or when a reader identifies a problem.
